Good medical colleges?

Doctoral means a PhD, which is a research degree. You want an MD, a medical degree. However, first you need to earn a bachelors degree. Medicine, premed, and anesthesiology are not majors - you'd pick a major from the ones that exist and take the premed classes (bio, chem, physics, math, and English) along with it. Premed classes are offered at all 4-year colleges and universities. Art is fine for a major, but it's a good idea to pick a major you can use to get a job, since not everyone gets into med school. You'll need a very high college GPA and great MCAT scores to have a shot at med school. If you do get into med school, it's another 4 years of college, followed by 5 years of residency (training) in anesthesiology. You don't find a place for your specialty until after med school, not after high school.
